Delicious and crunchy spring rolls filled with a savory pork and vegetable mixture, perfect for appetizers or snacks.
Ingredients:
- 20 spring roll wrappers, cut in half diagonally
- 100g (3.5oz) pork mince
- ½ carrot, shredded
- ½ onion, thinly sliced
- ½ small white cabbage, shredded
- ½ cup rehydrated wood ear mushrooms, shredded
- 1 tsp chicken powder (or bouillon)
- ½ tsp sugar
- ½ tsp YumYum seasoning (optional, can sub with MSG or omit)
- ½ tsp salt
- ¼ tsp five-spice powder
- 1 tbsp Shaoxing wine (or dry sherry)
- 1 tsp sesame oil
- 1 tbsp potato starch (or cornstarch)
- Vegetable oil, for frying
Instructions:
- Prepare the Filling:
- Heat a pan over medium heat with 1 tbsp oil. Add pork mince and cook until browned, breaking it into small pieces.
- Add carrot, onion, cabbage, and wood ear mushrooms. Stir-fry for 3–4 minutes until slightly softened.
- Season with chicken powder, sugar, YumYum seasoning, salt, five-spice powder, and cooking wine. Mix well.
- Push the mixture to the sides, creating a well in the center. Drain excess liquid (if any).
- Sprinkle potato starch over the filling and stir to thicken. Let it cool completely before wrapping.
- Wrap the Spring Rolls:
- Place a halved wrapper on a clean surface in a diamond shape.
- Add 1–2 tsp filling near the bottom corner.
- Fold the bottom over the filling, tuck in the sides, and roll tightly. Seal the edge with a dab of water or flour paste.
- Fry to Crispy Perfection:
- Heat oil in a deep pan to 180°C (350°F).
- Fry in small batches for 2–3 minutes per side until golden and crispy. Avoid overcrowding.
- Drain on paper towels.
- Serve Hot:
- Enjoy with sweet chili sauce, soy-vinegar dip, or hoisin sauce.
Tips for Success:
✔ Dry filling = crispier rolls (moisture makes them soggy).
✔ Seal tightly to prevent oil seepage.
✔ Maintain oil temp—too low = greasy, too high = burns.
✔ Freeze before frying? Yes! Freeze uncooked rolls, then fry straight from frozen (add 1–2 extra minutes).
These spring rolls are perfect as an appetizer or snack! Let me know if you’d like variations (baked instead of fried, vegetarian option, etc.). 😊🍴
