Crispy, flaky layers with aromatic green onions—perfect as a side or snack!
Ingredients
- 300g all-purpose flour
- 5g salt
- 1 egg
- 40g chopped green onions (scallions)
- 130ml hot water (~80°C/176°F)
- 2 tbsp sesame oil or vegetable oil (for brushing)
- Extra flour for dusting
Instructions
1️⃣ Make the Dough
- In a bowl, mix flour + salt.
- Add hot water gradually while stirring with chopsticks until a shaggy dough forms.
- Add egg and knead for 5 mins until smooth. Cover, rest for 30 mins.
2️⃣ Shape & Layer
- Divide dough into 4-5 balls. Roll each into a thin rectangle.
- Brush with oil, sprinkle green onions, and roll tightly into a log.
- Coil the log into a spiral (like a cinnamon roll), then flatten gently.
3️⃣ Cook
- Heat a pan with oil over medium. Cook each flatbread 2-3 mins per side until golden and crispy.
- Optional: Press lightly with a spatula for extra flakiness.
Tips
- Hot water makes the dough pliable and tender.
- For extra layers, fold the rectangle like a letter before rolling.
- Serve with soy sauce or chili oil for dipping!
