Crispy, flaky layers with aromatic green onions—perfect as a side or snack!

Ingredients

  • 300g all-purpose flour
  • 5g salt
  • 1 egg
  • 40g chopped green onions (scallions)
  • 130ml hot water (~80°C/176°F)
  • 2 tbsp sesame oil or vegetable oil (for brushing)
  • Extra flour for dusting

Instructions

1️⃣ Make the Dough

  • In a bowl, mix flour + salt.
  • Add hot water gradually while stirring with chopsticks until a shaggy dough forms.
  • Add egg and knead for 5 mins until smooth. Cover, rest for 30 mins.

2️⃣ Shape & Layer

  • Divide dough into 4-5 balls. Roll each into a thin rectangle.
  • Brush with oil, sprinkle green onions, and roll tightly into a log.
  • Coil the log into a spiral (like a cinnamon roll), then flatten gently.

3️⃣ Cook

  • Heat a pan with oil over medium. Cook each flatbread 2-3 mins per side until golden and crispy.
  • Optional: Press lightly with a spatula for extra flakiness.

Tips

  • Hot water makes the dough pliable and tender.
  • For extra layers, fold the rectangle like a letter before rolling.
  • Serve with soy sauce or chili oil for dipping!
