Mini Banana Pancake Bites

Fluffy, bite-sized pancakes with sweet banana pieces in every bite! Perfect for breakfast, snacks, or baby-led weaning.

📝 Ingredients (Makes ~15 mini pancakes)

  • 1 ripe banana, cut into 15 small chunks
  • 75ml (⅓ cup) oat milk (or any milk)
  • ½ tbsp apple cider vinegar
  • 50g (⅓ cup) flour (all-purpose or whole wheat)
  • ½ tsp vanilla extract
  • ½ tsp baking powder
  • Pinch of salt
  • ½ tbsp vegetable oil (for frying)

👩‍🍳 Method

1️⃣ Make “Buttermilk”

  • Mix oat milk + vinegar, let sit 5 mins.

2️⃣ Make Batter

  • Whisk flour, baking powder, salt.
  • Add vanilla, oil, and buttermilk. Mix until smooth.

3️⃣ Coat & Fry

  • Dip banana chunks in batter.
  • Fry in a lightly oiled pan over medium-low heat for 2-3 mins per side until golden.

💡 Tips

✔ Use very ripe bananas for sweetness.
✔ Keep pancakes small (1-inch wide) for even cooking.
✔ Freeze extras—reheat in a toaster!
