A delicious appetiser or snack — crisp toasted bread topped with creamy garlic-basil cheese and juicy roasted cherry tomatoes.
Ingredients:
- 20 slices of bread
- 3 tbsp olive oil + 2 tbsp olive oil (divided)
- 250g cherry tomatoes
- 5 garlic cloves
- 250g cream cheese
- 6–7 fresh basil leaves
- Salt and pepper, to taste
- Balsamic vinegar, for drizzling
Instructions:
- Prepare the bread:
Place the bread slices on a baking tray. Mix 3 tbsp olive oil with 2 minced garlic cloves and brush it over each slice. - Toast the bread:
Bake the bread at 200°C (392°F) for 10 minutes or until golden and slightly crisp. - Roast the tomatoes:
Add the cherry tomatoes to the tray. Mix them with 1 minced garlic clove, a drizzle of olive oil, salt, and pepper. Stir well to coat. - Make the cream cheese spread:
In a blender or food processor, combine the cream cheese, remaining 2 garlic cloves, 2 tbsp olive oil, and basil leaves. Blend until smooth and creamy. - Assemble:
Spread the herbed cream cheese onto each toasted bread slice.
Top with roasted cherry tomatoes, chopped basil, and a light drizzle of balsamic vinegar.
Tip:
Best served fresh as an appetiser or as a light side dish for gatherings!
