Crispy Parmesan-Crusted Roasted Potatoes

Ingredients

For the Garlic Herb Butter

  • 4 tbsp unsalted butter, melted
  • 1 tbsp olive oil
  • 3 garlic cloves, minced
  • 2 tbsp fresh parsley, finely chopped
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp oregano
  • ¼ tsp red pepper flakes (optional)
  • ½ cup parmesan, grated (divided – half for butter, half for coating)

For the Potatoes

  • 2 lbs baby gold potatoes, rinsed & halved
  • Non-stick baking tray or parchment paper

Instructions

🔹 1. Preheat & Prep

  • Preheat oven to 400°F (200°C).
  • Rinse and slice the potatoes in half. Pat dry if needed.

🔹 2. Make Garlic Parmesan Butter

  • In a bowl, mix together the melted butter, olive oil, garlic, parsley, salt, black pepper, oregano, and ¼ cup grated parmesan.
  • Stir until well combined.

🔹 3. Toss Potatoes

  • Add halved potatoes to a large mixing bowl.
  • Pour over the garlic-parmesan butter and toss until every piece is evenly coated.

🔹 4. Crust with Parmesan

  • Place the remaining ¼ cup grated parmesan into a shallow bowl or plate.
  • Dip each potato half (flat side down) into the cheese, pressing gently to coat.
  • Place flat-side down onto a non-stick or parchment-lined baking tray.

🔹 5. Bake

  • Bake for 30–40 minutes or until the bottoms are golden brown and crispy, and the insides are tender.

Serving Tips

Serve hot with your favourite dipping sauce — garlic aioli, sour cream, or chipotle mayo all work great!

  • Store leftovers in an airtight container for up to 3–4 days in the fridge.
  • Reheat in the oven or air fryer to maintain crispiness.
