Spicy Chicken & Cheese Stuffed Buns

Crispy rolls stuffed with creamy, spicy chicken, caramelized onions, and melted cheese.

🍗 Chicken Mixture

Ingredients:

  • 25g unsalted butter
  • 20ml olive oil
  • 500g chicken thighs (or breast), diced
  • ⅔ tsp cayenne powder (adjust for heat)
  • ⅔ tsp red bell pepper powder (or paprika)
  • 1 tsp onion powder
  • ⅔ tsp garlic powder
  • ⅔ tsp chicken seasoning (or bouillon)
  • 1g dried parsley
  • 25g sweet soy sauce (ketjap manis)
  • 10g soy sauce
  • 15g sambal (or chili paste)
  • 100ml heavy cream
  • 50g grated cheese (cheddar/mozzarella)

Method:

  1. Sear chicken: Heat butter + oil in a skillet. Add chicken and dry spices. Cook 4-5 mins until browned.
  2. Saucy finish: Add soy sauces, sambal, and cream. Simmer on high until slightly thickened (~3 mins).
  3. Cheesy stir: Off heat, mix in grated cheese. Set aside.

🧅 Onion Mixture

Ingredients:

  • 125g yellow onion (1 onion), finely chopped
  • 125g grated cheese
  • ½ tsp dried parsley

Method:

  1. Caramelize onions: In the same skillet, cook onions 5-7 mins until golden.
  2. Combine: Mix onions with cheese and parsley.

🍞 Assembly & Baking

Ingredients:

  • 4-6 white rolls (brioche or burger buns)
  • Extra cheese (cheddar/mozzarella, for stuffing)

Steps:

  1. Prep buns: Slice tops off, hollow out centers (save for breadcrumbs!).
  2. Layer:
    • Fill each bun with a layer of cheese → spicy chicken mix.
    • Top with onion-cheese mixture.
  3. Bake: 200°C (390°F) for 5-7 mins until cheese bubbles.
