Creamy peanut butter-stuffed dates coated in crunchy nuts and rich chocolate – a healthy-ish treat!
Ingredients
- Dates: 25 (pitted)
- Peanut butter: 200g (or almond butter)
- Crushed almonds/pistachios: 50g
- Chocolate topping: 100g dark + 100g milk chocolate
- Oil: 2 tbsp (coconut or neutral oil)
Instructions
- Prep dates: Slit dates open, remove pits.
- Fill: Pipe or spoon peanut butter into each date. Press closed.
- Coat: Roll in crushed nuts, then freeze 10 mins.
- Chocolate dip: Melt chocolate + oil (bain-marie). Dip dates halfway.
- Set: Place on parchment paper, chill 1 hour.
Tip: Sprinkle with sea salt for a sweet-salty kick!
