Ingredients

For the Sauce & Gnocchi

  • ½ cup reserved pasta water

  • 2 (4-oz) fresh burrata balls
  • ½ cup fresh basil, torn (plus extra for garnish)

Instructions

1. Cook the Tomato Sauce

  • Heat olive oil in a large skillet over medium-low. Add garlic and sauté until fragrant (~2 min).
  • Increase heat to medium, add cherry tomatoes, and cook 10-12 min, stirring occasionally, until jammy.
  • Season with red pepper flakes (if using), salt, and pepper. Reduce heat to medium-low, stir in heavy cream, and simmer.

2. Cook the Gnocchi

  • Bring a large pot of salted water to a boil. Add gnocchi and cook per package instructions.
  • Reserve ½ cup pasta water, then drain gnocchi.

3. Combine & Finish

  • Add gnocchi and reserved pasta water to the skillet. Toss 2 min until sauce thickens.
  • Stir in basil (reserve some for garnish).
  • Break burrata over the top, then remove from heat. Garnish with remaining basil.
